Super Green Rice Paper Rolls with Chicken

You can use any greens you like in these rice paper rolls. This recipe is fantastic for using up leftover roast chicken.
Ingredients
8 rice paper rounds
8 lettuce leaves
8 baby buk choy leaves
3 baby cucumbers, sliced with a peeler lengthwise
3 spring onions, sliced in half lengthwise & through the middle
1 small carrot, julienned
1 small carrot, julienned
8 coriander stems
1 roast chicken breast, sliced
½ cup hoisin sauce
Method
Prepare the rice paper rounds as per package directions.
Divide the salad and chicken between the rounds, drizzle over a tsp of hoisin sauce and roll them up.
Place remaining sauce in a bowl and enjoy.
